  • 1 tbsp chopped cilantro

For the Rice Base:

  • 2 cups cooked rice (white, brown, or cilantro-lime rice)
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro

Optional Toppings:

  • Avocado slices
  • Jalapeños
  • Crushed tortilla chips
  • Pico de gallo
  • Black beans

Instructions

1. Marinate and Cook the Chicken

  1. In a bowl, mix olive oil, lime juice, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper.
  2. Coat the chicken in the marinade and let it sit for at least 20 minutes (or overnight for deeper flavor).
  3. Heat a grill pan or skillet over medium heat and cook the chicken for 5-7 minutes per side, until fully cooked.
  4. Let it rest for 5 minutes, then slice into strips.

2. Prepare the Street Corn Mixture

  1. In a pan over medium heat, cook the corn kernels for 3-5 minutes, stirring occasionally until slightly charred.
  2. In a bowl, mix cooked corn, mayonnaise, sour cream, cotija cheese, lime juice, chili powder, and cilantro.

3. Cook the Rice Base

  1. Add a base of cooked rice to a bowl.
