Description

This Strawberry Red Velvet Cheesecake is a dreamy combination of velvety red velvet cake, luscious cheesecake, and fresh strawberry flavors. With its rich, moist texture and creamy layers, this show-stopping dessert is perfect for holidays, birthdays, or any special occasion.


Ingredients

For the Red Velvet Cake:

1 ½ cups all-purpose flour

1 cup granulated sugar

1 tsp baking soda

1 tbsp cocoa powder

½ tsp salt

¾ cup vegetable oil

½ cup buttermilk

2 eggs

1 tsp vanilla extract

1 tsp white vinegar

1 tbsp red food coloring

For the Cheesecake Layer:

16 oz cream cheese, softened

½ cup granulated sugar

2 eggs

1 tsp vanilla extract

½ cup sour cream

For the Strawberry Topping:

1 ½ cups fresh strawberries, chopped

¼ cup granulated sugar

1 tbsp lemon juice


Instructions

Prepare the Cheesecake Layer:

Preheat oven to 325°F (163°C).

Beat cream cheese and sugar until smooth.

Add eggs one at a time, mixing well after each.

Stir in vanilla and sour cream until combined.

Pour into a greased springform pan and bake for 35 minutes or until set. Let cool.

Make the Red Velvet Cake:

Preheat oven to 350°F (175°C).

Whisk dry ingredients in a bowl.

In another bowl, mix oil, buttermilk, eggs, vanilla, vinegar, and food coloring.

Gradually add dry ingredients and mix until smooth.

Pour batter into a greased cake pan and bake for 30 minutes or until a toothpick comes out clean. Let cool.

Prepare the Strawberry Topping:

In a saucepan over medium heat, combine strawberries, sugar, and lemon juice.

Simmer for 10 minutes until thickened. Let cool.

Assemble the Cheesecake:

Place the red velvet cake layer on a serving plate.

Carefully place the cheesecake layer on top.

Spread the strawberry topping over the cheesecake.

Chill for 1 hour before serving.

Notes

Use gel food coloring for a more vibrant red color.

Make sure the cheesecake is fully cooled before assembling.

Refrigerate overnight for the best flavor.
