Ingredients
For the Cake Batter:
- 1 box strawberry cake mix (or homemade strawberry cake batter)
- 3 large eggs
- ½ cup vegetable oil
- 1 cup water
- 1 cup fresh or frozen strawberries, diced
- ½ cup white chocolate chips (optional)
For the Cream Cheese Swirl:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, melted
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
Step 1: Prepare the Cake Batter
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine the cake mix, eggs, oil, and water. Mix until smooth.
- Gently fold in the diced strawberries and white chocolate chips (if using).
- Pour the batter into the prepared baking dish and spread it evenly.
Step 2: Make the Cream Cheese Mixture
- In another bowl, beat cream cheese, melted butter, powdered sugar, and vanilla extract until smooth and creamy.
- Drop spoonfuls of the cream cheese mixture over the cake batter.
- Use a butter knife to swirl the cream cheese into the batter, creating a marbled effect.
Step 3: Bake and Enjoy the Earthquake Effect
- Bake for 40-45 minutes or until the center is mostly set (a slight jiggle is okay).
- Let the cake cool for at least 15 minutes before slicing.
- Serve warm or at room temperature with whipped cream, ice cream, or extra strawberries!
Notes
Use fresh strawberries for the best flavor, but if using frozen, drain excess water.
Do not overmix the batter to maintain a light and fluffy texture.
Swirl the cream cheese lightly to ensure pockets of gooey goodness.
Let the cake cool before cutting to allow the layers to set properly.
