Description

This Strawberry Drip Cake is a showstopper! Made with soft vanilla or chocolate sponge layers, filled with creamy strawberry buttercream, and topped with a beautiful chocolate ganache drip, this cake is as delicious as it is gorgeous.

For the Strawberry Buttercream:

  • 2 cups unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup fresh strawberry puree
  • 1 tsp vanilla extract

For the Chocolate Drip:

  • ½ cup white or dark chocolate, chopped
  • ¼ cup heavy cream

For Decoration:

  • Fresh strawberries
  • Edible flowers (optional)
  • Sprinkles or gold leaf (optional)

Instructions

Bake the Cake

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  5. Alternately add the dry ingredients and milk, mixing until smooth.
  6. Divide batter evenly into cake pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  7. Let cakes cool completely before frosting.

Make the Strawberry Buttercream

  1. Beat butter until creamy.
  2. Gradually add powdered sugar, beating until fluffy.
  3. Mix in fresh strawberry puree and vanilla extract until smooth.

Assemble and Frost the Cake

  1. Stack the cake layers with a generous amount of strawberry buttercream between each.
  2. Apply a thin crumb coat and refrigerate for 15 minutes.
  3. Frost the cake with a smooth, final layer of buttercream.

Prepare the Chocolate Drip

  1. Heat heavy cream until warm but not boiling.
  2. Pour over chopped chocolate and let sit for 1-2 minutes, then stir until smooth.
  3. Let cool slightly before drizzling over the chilled cake using a spoon or squeeze bottle.

Decorate the Cake

  1. Arrange fresh strawberries on top for a beautiful finish.
  2. Add edible flowers, sprinkles, or gold leaf for an elegant touch.
