Instructions
Bake the Cake
- Preheat your oven to 350°F (175°C) and grease three 8-inch cake pans.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- Alternately add the dry ingredients and milk, mixing until smooth.
- Divide batter evenly into cake pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let cakes cool completely before frosting.
Make the Strawberry Buttercream
- Beat butter until creamy.
- Gradually add powdered sugar, beating until fluffy.
- Mix in fresh strawberry puree and vanilla extract until smooth.
Assemble and Frost the Cake
- Stack the cake layers with a generous amount of strawberry buttercream between each.
- Apply a thin crumb coat and refrigerate for 15 minutes.
- Frost the cake with a smooth, final layer of buttercream.
Prepare the Chocolate Drip
- Heat heavy cream until warm but not boiling.
- Pour over chopped chocolate and let sit for 1-2 minutes, then stir until smooth.
- Let cool slightly before drizzling over the chilled cake using a spoon or squeeze bottle.
Decorate the Cake
- Arrange fresh strawberries on top for a beautiful finish.
- Add edible flowers, sprinkles, or gold leaf for an elegant touch.
