For the Frosting:

2 cups heavy whipping cream

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

For the Strawberry Crunch Topping:

1 ½ cups golden Oreos, crushed

½ cup freeze-dried strawberries, crushed

¼ cup melted butter

Optional Add-Ons:

Fresh strawberries for garnish

White chocolate drizzle

Extra whipped cream


Instructions

Prepare the Cake Base

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
  4. Stir in vanilla extract and strawberry puree.
  5. Alternately add the dry ingredients and milk, mixing until just combined.
  6. Divide batter evenly between pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Let cakes cool completely before frosting.

Make the Frosting

  1. Beat cream cheese until smooth.
  2. Add powdered sugar and vanilla, mixing until creamy.
  3. In another bowl, whip heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.

Prepare the Crunch Topping

  1. Crush golden Oreos and freeze-dried strawberries into small crumbs.
  2. Mix in melted butter until evenly combined.

Assemble the Cake

  1. Place one cake layer on a serving plate and spread a generous amount of frosting on top.
  2. Add the second cake layer and frost the entire cake.
  3. Sprinkle the strawberry crunch topping all over the cake, pressing lightly so it sticks.
  4. Garnish with fresh strawberries if desired.
