Description

This homemade strawberry cake is bursting with natural strawberry flavor, making it the perfect treat for any occasion. Made with real strawberry puree and topped with a luscious cream cheese frosting, this cake is soft, moist, and irresistibly sweet.

Ingredients

Scale

For the Strawberry Cake:

2 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

¾ cup unsalted butter, softened

1 ¾ cups granulated sugar

4 large eggs

½ cup buttermilk

½ cup sour cream

1 teaspoon vanilla extract

1 cup fresh strawberry puree (blended and reduced for stronger flavor)

For the Strawberry Cream Cheese Frosting:

8 oz (225g) cream cheese, softened

½ cup unsalted butter, softened

34 cups powdered sugar

1 teaspoon vanilla extract

23 tablespoons strawberry puree

Instructions

Step 1: Prepare the Strawberries

Wash and hull fresh strawberries.

Blend them into a smooth puree.

For an intense strawberry flavor, cook the puree over low heat until reduced by half, then let it cool.

Step 2: Make the Cake Batter

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch cake pans.

In a bowl, whisk together the flour, baking powder, baking soda, and salt.

In another bowl, beat the butter and sugar until light and fluffy.

Add eggs one at a time, mixing well after each addition.

Mix in the vanilla extract, buttermilk, sour cream, and strawberry puree.

Gradually add dry ingredients, mixing until just combined.

Step 3: Bake the Cake

Divide the batter evenly between the cake pans.

Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 4: Make the Strawberry Frosting

Beat cream cheese and butter together until smooth.

Gradually add powdered sugar, mixing on low speed.

Add vanilla extract and strawberry puree, then mix until fluffy.

Step 5: Assemble the Cake

Place one cake layer on a serving plate. Spread a layer of frosting evenly on top.

Place the second cake layer on top and frost the entire cake.

Decorate with fresh strawberries or piping as desired.

Notes

Use fresh, ripe strawberries for the best natural flavor.
Reduce the strawberry puree to intensify the taste.
Measure ingredients correctly to ensure a perfect texture.
Don’t overmix the batter to keep the cake light and fluffy.
Let the cake cool completely before frosting to prevent melting.
