Description

Strawberry and Jalapeño Chicken combines juicy strawberries, fiery jalapeños, and tender chicken in a bold glaze that’s sweet, spicy, and absolutely unforgettable. Whether grilled, pan-seared, or baked, this dish brings excitement to your plate with every bite.


Ingredients

1.5 lbs boneless, skinless chicken thighs (or breasts)

1 cup fresh strawberries, chopped

12 jalapeños, diced (seeds removed for less heat)

2 cloves garlic, minced

1 small red onion, finely chopped

2 tbsp honey or brown sugar

1 tbsp balsamic vinegar

1 tbsp olive oil

Salt, pepper, and smoked paprika to taste

Optional: Fresh cilantro, lime wedges for garnish


Instructions

Prep Ingredients: Dice strawberries, jalapeños, onion, and garlic. Season chicken with salt, pepper, and paprika.

Make Glaze: In a saucepan, heat olive oil over medium. Add garlic and onion, sauté until translucent. Add strawberries, jalapeños, honey, vinegar, and a pinch of salt. Simmer for 10–15 minutes until thickened.

Cook Chicken: In a skillet or grill pan over medium-high heat, cook chicken for 5–6 minutes per side until internal temperature reaches 165°F (74°C).

Glaze and Finish: Brush chicken with glaze in the final minutes of cooking. Let rest for 5 minutes before serving. Garnish with fresh cilantro and extra glaze.

Notes

For milder heat, remove all seeds from jalapeños.

Use fresh strawberries for the best flavor—frozen can work if thawed and drained.

Don’t overcook the chicken—use a thermometer for perfect juiciness.

Add lime juice before serving to brighten the flavors.

Double the glaze—it stores well and makes a great dip or topping for other dishes.
