Instructions
Step 1: Prepare the Tomato Base
- Blend the tomatoes, onion, and garlic until smooth.
- Add 1 cup of broth and blend again until fully combined. Set aside.
Step 2: Toast the Pasta
- Heat 2 tablespoons of vegetable oil in a pot over medium heat.
- Add the shell pasta and stir constantly until golden brown (about 3-5 minutes).
Step 3: Cook the Soup
- Pour the blended tomato mixture into the pot with the toasted pasta.
- Stir and let it simmer for 2-3 minutes to deepen the flavors.
- Add the remaining 3 cups of broth or water and bring to a boil.
- Reduce the heat and let it simmer for 10-12 minutes, or until the pasta is tender.
