For the Soup:

  • 1 ½ cups small shell pasta (conchas)
  • 2 tablespoons vegetable oil
  • 3 cups additional broth or water
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ teaspoon cumin (optional)

Optional Garnishes:

  • Fresh cilantro, chopped
  • Lime wedges
  • Cotija or queso fresco cheese
  • Avocado slices

Instructions

Step 1: Prepare the Tomato Base

  1. Blend the tomatoes, onion, and garlic until smooth.
  2. Add 1 cup of broth and blend again until fully combined. Set aside.

Step 2: Toast the Pasta

  1. Heat 2 tablespoons of vegetable oil in a pot over medium heat.
  2. Add the shell pasta and stir constantly until golden brown (about 3-5 minutes).

Step 3: Cook the Soup

  1. Pour the blended tomato mixture into the pot with the toasted pasta.
  2. Stir and let it simmer for 2-3 minutes to deepen the flavors.
  3. Add the remaining 3 cups of broth or water and bring to a boil.
  4. Reduce the heat and let it simmer for 10-12 minutes, or until the pasta is tender.

Step 4: Season and Serve

  1. Add salt, pepper, and cumin to taste.
  2. Garnish with fresh cilantro, cheese, or a squeeze of lime.
