This easy slow-cooker recipe brings the comfort of traditional Salisbury steak into bite-sized, melt-in-your-mouth meatballs. For the Meatballs:

  • 1 ½ lbs ground beef (or a mix of beef and pork)
  • ½ cup breadcrumbs (or crushed crackers)
  • 1 egg
  • 1 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for browning, optional)

For the Gravy:

  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 small onion, finely chopped
  • 1 cup mushrooms, sliced
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
  • Salt and pepper to taste

Instructions

1. Prepare the Meatballs

  1. In a large bowl, mix the ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper.
  2. Gently roll into 1-inch meatballs.

2. Brown the Meatballs (Optional, But Recommended)

  • Heat a skillet with 1 tbsp olive oil over medium heat.
  • Brown the meatballs for 1-2 minutes per side (they don’t need to be fully cooked).

3. Make the Gravy

  1. In a bowl, whisk together beef broth, Worcestershire sauce, and ketchup.
  2. Stir in chopped onions and mushrooms.

4. Slow Cook the Meatballs

  1. Place the meatballs in the slow cooker.
  2. Pour the gravy mixture over them.
  3. Cover and cook on:
    • LOW for 4-5 hours
    • HIGH for 2-3 hours

5. Thicken the Gravy

  • In the last 30 minutes, stir in the cornstarch slurry to thicken the gravy.

6. Serve and Enjoy!

  • Serve hot over mashed potatoes, rice, or noodles.
