Ingredients
For the Beef Bites:
- 2 lbs beef chuck, cut into bite-sized cubes
- 3 tbsp butter, divided
- 4 cloves garlic, minced

- ½ tsp smoked paprika
- 1 tsp onion powder
- ½ tsp dried thyme
- ½ cup beef broth
- 1 tbsp Worcestershire sauce
For the Potatoes:
- 1.5 lbs baby potatoes, halved
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp dried rosemary
Optional Add-Ins:
- ¼ tsp red pepper flakes (for a spicy kick)
- ½ cup shredded cheese (for extra creaminess)
Instructions
Step 1: Prepare the Ingredients
- Cut the beef into bite-sized cubes and season with salt, pepper, paprika, onion powder, and thyme.
- Halve the baby potatoes and toss them with olive oil, salt, pepper, garlic powder, and rosemary.
Step 2: Sear the Beef (Optional, But Recommended!)
- Heat a skillet over medium-high heat and melt 1 tbsp butter.
- Sear the beef bites in batches for 2-3 minutes per side until browned.
- Remove from the pan and set aside.
Step 3: Assemble in the Slow Cooker
- Place the seared beef in the slow cooker.
- Add minced garlic, Worcestershire sauce, beef broth, and the remaining butter.
- Spread the seasoned potatoes on top.
Step 4: Cook Low and Slow
- Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender and potatoes are soft.
Step 5: Serve and Enjoy
- Stir everything gently to coat in the garlic butter sauce.
- Garnish with fresh parsley and serve hot.
