Ingredients
Scale
For the Brownie Cookie Dough
- 1 cup semi-sweet chocolate chips
- ½ cup unsalted butter
- ¾ cup granulated sugar
- ½ cup light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ¼ cup unsweetened cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon salt
For the Filling
- 12 Reese’s Peanut Butter Cups (mini or standard size)
Instructions
Step 1: Prepare the Brownie Cookie Dough
- Melt the chocolate chips and butter in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. Allow the mixture to cool slightly.
- In a mixing bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla extract until light and creamy.
- Slowly mix in the melted chocolate until well combined.
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add this to the wet ingredients, mixing until a soft dough forms.
- Chill the dough in the refrigerator for at least 30 minutes for easier handling.
Step 2: Assemble the Cookies
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop a tablespoon of dough and flatten it into a small disk. Place a Reese’s Peanut Butter Cup in the center and cover it with another disk of dough. Seal the edges to completely enclose the candy.
- Place the assembled cookies on the prepared baking sheet, spacing them about 2 inches apart.
Step 3: Bake and Cool
- Bake in the preheated oven for 10–12 minutes, or until the edges are set but the centers look slightly soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
