For the Brownie Cookie Dough

  • 1 cup semi-sweet chocolate chips
  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

  • 12 Reese’s Peanut Butter Cups (mini or standard size)

Instructions

Step 1: Prepare the Brownie Cookie Dough

  1. Melt the chocolate chips and butter in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. Allow the mixture to cool slightly.
  2. In a mixing bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla extract until light and creamy.
  3. Slowly mix in the melted chocolate until well combined.
  4. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add this to the wet ingredients, mixing until a soft dough forms.
  5. Chill the dough in the refrigerator for at least 30 minutes for easier handling.

Step 2: Assemble the Cookies

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Scoop a tablespoon of dough and flatten it into a small disk. Place a Reese’s Peanut Butter Cup in the center and cover it with another disk of dough. Seal the edges to completely enclose the candy.
  3. Place the assembled cookies on the prepared baking sheet, spacing them about 2 inches apart.

Step 3: Bake and Cool

  1. Bake in the preheated oven for 10–12 minutes, or until the edges are set but the centers look slightly soft.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
