Description

Red Lobster Shrimp Scampi is a fan-favorite for a reason — tender shrimp sautéed in a rich, garlicky butter sauce with hints of lemon and white wine. This easy homemade version captures all the flavors you love, ready in less than 30 minutes! Whether you’re serving it over pasta, rice, or with crusty bread, this dish makes an irresistible weeknight dinner or special occasion meal.

Ingredients

Scale

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

2 tbsp olive oil

4 garlic cloves, minced

1/4 cup dry white wine (like Sauvignon Blanc)

1 tbsp freshly squeezed lemon juice

1 tsp red pepper flakes (optional for heat)

Salt and pepper to taste

2 tbsp fresh parsley, chopped

Grated Parmesan cheese for garnish

Lemon wedges for serving

Instructions

Prep the Shrimp: Pat the shrimp dry and season lightly with salt and pepper.

Heat the Pan: In a large skillet, heat olive oil and 2 tbsp butter over medium heat.

Cook the Shrimp: Add the shrimp to the skillet and cook for 1-2 minutes on each side until pink and opaque. Remove from the pan and set aside.

Sauté Garlic: In the same pan, add the remaining butter and minced garlic. Cook for about 1 minute until fragrant.

Deglaze with Wine: Pour in the white wine and lemon juice, scraping any bits from the bottom of the pan. Let simmer for 2-3 minutes until slightly reduced.

Combine: Return the shrimp to the pan, tossing to coat in the sauce. Cook for another minute until heated through.

Garnish and Serve: Sprinkle fresh parsley and grated Parmesan on top. Serve with lemon wedges and your favorite sides.

Notes

Use Fresh Shrimp: Fresh or high-quality frozen shrimp make a big difference in flavor and texture.

Don’t Overcook: Shrimp cook quickly—2-3 minutes per side is all they need. Overcooking leads to rubbery shrimp.

Balance the Sauce: Adjust the lemon juice and wine to find your perfect balance of acidity and richness.

Finish with Fresh Herbs: Fresh parsley adds a pop of color and freshness. Don’t skip it!
