Description

Main Ingredients:

1 lb (500g) pork shoulder, cut into cubes

½ lb (250g) pork liver, cut into cubes

1 medium onion, chopped

4 cloves garlic, minced

2 large tomatoes, chopped

1 cup tomato sauce

1 cup water or broth

1 tbsp soy sauce

1 tbsp fish sauce (optional)

1 tbsp sugar (optional)

2 medium potatoes, diced

1 medium carrot, diced

1 bell pepper, diced

2 bay leaves

Salt and pepper to taste

2 tbsp cooking oil


Instructions

1. Prepare the Ingredients

Cut the pork and liver into bite-sized cubes.

Chop the onions, garlic, tomatoes, potatoes, carrots, and bell peppers.

2. Sauté the Aromatics

Heat oil in a pan over medium heat.

Sauté garlic and onions until fragrant.

Add tomatoes and cook until soft and mushy.

3. Cook the Pork

Add the pork cubes and cook until lightly browned.

Pour in soy sauce and fish sauce, then mix well.

4. Simmer the Stew

Add tomato sauce, water (or broth), and bay leaves.

Let it simmer for 30-40 minutes or until the pork is tender.

5. Add Vegetables and Liver

Add potatoes and carrots, then cook for 10 minutes.

Stir in the liver and bell peppers, then simmer for another 5 minutes.

6. Final Seasoning and Serving

Adjust seasoning with salt, pepper, and sugar if needed.

Let the sauce thicken, then serve hot with rice.

Notes

Marinate the pork in soy sauce and garlic for deeper flavor.
Add the liver last to keep it tender.
Use fresh tomatoes for a more natural sweetness.
Simmer on low heat for a richer and more flavorful sauce.
