Description

These Pecan Pie Muffins are the perfect quick dessert or snack! With buttery pecans, a gooey center, and a golden crust, they deliver all the flavors of pecan pie in a bite-sized treat.


Ingredients

1 cup chopped pecans

1 cup packed light brown sugar

½ cup all-purpose flour

2 large eggs

½ cup unsalted butter, melted


Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.

Mix Dry Ingredients: In a medium bowl, combine chopped pecans, brown sugar, and flour. Stir until evenly mixed.

Combine Wet Ingredients: In a separate bowl, whisk together the eggs and melted butter until smooth.

Combine and Mix: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ⅔ full.

Bake: Bake for 20–25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the muffins to cool in the pan for about 5 minutes before transferring to a wire rack. Serve warm or at room temperature.

Notes

Don’t Overmix: Overmixing can make the muffins dense. Stir just until the ingredients are combined.

Use Fresh Pecans: For the best flavor, use fresh pecans and toast them lightly for added depth.

Storage: Store leftovers in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.
