Description

No-bake peanut butter haystacks are the ultimate quick and easy treat. Made with creamy peanut butter, crunchy chow mein noodles (or oats), and a touch of sweetness, these no-bake delights are perfect for satisfying your sweet tooth without turning on the oven. Customize them with chocolate, nuts, or dried fruit for a personal touch!

Ingredients

Scale

Main Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup butter (unsalted)
  • 3/4 cup sugar (or substitute with honey/maple syrup)
  • 1 teaspoon vanilla extract
  • 3 cups chow mein noodles (or rolled oats)

Optional Add-ins:

  • 1/2 cup chocolate chips
  • 1/4 cup crushed nuts (almonds, peanuts, etc.)
  • 1/4 cup shredded coconut

Instructions

Prep Time:

  1. Line a baking sheet with parchment paper or a silicone mat.

Making the Mixture:

  1. In a medium saucepan, combine peanut butter, butter, and sugar (or chosen sweetener). Heat over medium heat, stirring until the mixture is smooth and well combined.
  2. Remove from heat and stir in the vanilla extract.

Combine Ingredients:

  1. Add chow mein noodles (or oats) to the mixture, stirring gently to coat everything evenly. If using add-ins like chocolate chips or nuts, fold them in now.

Forming Haystacks:

  1. Using a spoon, scoop small mounds of the mixture onto the prepared baking sheet.
  2. Let the haystacks cool and set at room temperature for 1-2 hours or refrigerate for faster results.

Serve and Enjoy:

  1. Once set, transfer the haystacks to an airtight container for storage. Enjoy them anytime as a snack or dessert!

Notes

  • For a vegan option, use plant-based butter and a vegan sweetener.
  • Gluten-free noodles or oats can be used to accommodate dietary needs.
  • If you prefer a firmer haystack, reduce the butter slightly or chill them for longer.
