2 ripe peaches, sliced

2 tablespoons balsamic vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

2 cloves garlic, minced

½ teaspoon red pepper flakes (optional)

For the Garnish:

¼ cup crumbled blue cheese

Fresh thyme or basil


Instructions

Step 1: Prepare the Pork Chops

Pat the pork chops dry with a paper towel.

Season both sides with salt, black pepper, and smoked paprika.

Heat a large skillet over medium-high heat and add olive oil.

Sear the pork chops for 4-5 minutes per side until golden brown. Remove and set aside.

Step 2: Make the Balsamic Peach Sauce

In the same skillet, add sliced peaches and cook for 2 minutes.

Stir in balsamic vinegar, honey, Dijon mustard, garlic, and red pepper flakes.

Simmer for 5 minutes until the sauce thickens slightly.

Step 3: Cook the Pork Chops with the Sauce

Return pork chops to the skillet and spoon the peach sauce over them.

Cover and cook for 5-7 minutes until the pork reaches an internal temperature of 145°F (63°C).

Step 4: Assemble and Serve

Remove pork chops from heat and let them rest for 5 minutes.

Sprinkle crumbled blue cheese on top.

Garnish with fresh thyme or basil.
