Ingredients

2 medium zucchinis

1 cup grated Parmesan cheese (freshly grated)

1/2 cup breadcrumbs (or almond flour for keto/gluten-free)

2 large eggs

1/2 tsp garlic powder

1/2 tsp paprika

1 tsp Italian seasoning (optional)

Salt and pepper, to taste

Olive oil spray (optional)


Instructions

Prep the Zucchini: Wash and cut zucchinis into fry-like sticks. Sprinkle with salt and let them sit for 15-20 minutes to draw out moisture. Pat dry.

Set Up Breading Station: In one bowl, beat the eggs. In another, mix Parmesan, breadcrumbs (or alternative), and seasonings.

Coat the Fries: Dip each zucchini stick in the egg, then coat in the Parmesan mixture. Press gently to ensure the coating sticks.

Bake or Air-Fry:

For Baking: Preheat oven to 425°F (220°C). Arrange fries on a parchment-lined baking sheet. Spray with oil. Bake for 20–25 minutes, flipping halfway.

For Air-Frying: Preheat air fryer to 400°F (200°C). Cook for 12–15 minutes, shaking halfway, until golden and crispy.
