Ingredients
Scale
- 2 large sweet onions (Vidalia or Walla Walla)
- 10–12 mozzarella string cheese sticks (or fresh mozzarella cut into strips)
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko or regular)
- 1/2 cup Parmesan cheese, grated (optional)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Vegetable or canola oil, for frying
Instructions
- Prep the Onions:
- Peel the onions and cut them into thick slices (about 1/2 inch). Separate the rings and set the smaller ones aside.
- Prepare the Mozzarella:
- Cut mozzarella sticks into smaller pieces to fit snugly inside the onion rings.
- Assemble the Onion Rings:
- Take two onion rings of slightly different sizes, and place a piece of mozzarella cheese between them. The cheese should fit tightly inside.
- Set Up the Breading Station:
- Place the flour in one bowl, beaten eggs in another, and breadcrumbs mixed with garlic powder, smoked paprika, Parmesan cheese, salt, and pepper in a third.
- Coat the Onion Rings:
- Dip each stuffed onion ring into the flour, then into the beaten eggs, and finally coat it in the breadcrumb mixture. For extra crispiness, repeat the egg and breadcrumb step.
- Fry to Perfection:
- Heat oil in a deep skillet or frying pot to 350°F (175°C). Carefully fry the onion rings in batches until golden brown, about 2–3 minutes per side. Drain on paper towels.
- Serve and Enjoy:
- Serve the mozzarella onion rings hot with your favorite dipping sauces like marinara, ranch, or sriracha mayo.
Notes
- For a healthier option, bake the onion rings at 400°F (200°C) for 15–20 minutes, or use an air fryer at 375°F (190°C) for 10–12 minutes.
- Freeze uncooked rings in a single layer for easy make-ahead preparation. Fry directly from frozen when needed.
