  • 2 large sweet onions (Vidalia or Walla Walla)
  • 1012 mozzarella string cheese sticks (or fresh mozzarella cut into strips)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup Parmesan cheese, grated (optional)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Vegetable or canola oil, for frying

Instructions

  • Prep the Onions:
    • Peel the onions and cut them into thick slices (about 1/2 inch). Separate the rings and set the smaller ones aside.
  • Prepare the Mozzarella:
    • Cut mozzarella sticks into smaller pieces to fit snugly inside the onion rings.
  • Assemble the Onion Rings:
    • Take two onion rings of slightly different sizes, and place a piece of mozzarella cheese between them. The cheese should fit tightly inside.
  • Set Up the Breading Station:
    • Place the flour in one bowl, beaten eggs in another, and breadcrumbs mixed with garlic powder, smoked paprika, Parmesan cheese, salt, and pepper in a third.
  • Coat the Onion Rings:
    • Dip each stuffed onion ring into the flour, then into the beaten eggs, and finally coat it in the breadcrumb mixture. For extra crispiness, repeat the egg and breadcrumb step.
  • Fry to Perfection:
    • Heat oil in a deep skillet or frying pot to 350°F (175°C). Carefully fry the onion rings in batches until golden brown, about 2–3 minutes per side. Drain on paper towels.
  • Serve and Enjoy:
    • Serve the mozzarella onion rings hot with your favorite dipping sauces like marinara, ranch, or sriracha mayo.

Notes

  • For a healthier option, bake the onion rings at 400°F (200°C) for 15–20 minutes, or use an air fryer at 375°F (190°C) for 10–12 minutes.
