This Mint Chocolate Cheesecake Cake is a dessert lover’s dream! It features layers of moist chocolate cake with a refreshing mint-flavored cheesecake in the middle, all topped with a creamy mint buttercream frosting and a decadent chocolate ganache.
Ingredients
For the Mint Cheesecake Layer:
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp peppermint extract
½ cup sour cream
Few drops green food coloring (optional)
For the Chocolate Cake Layers:
2 cups all-purpose flour
1 ¾ cups granulated sugar
¾ cup unsweetened cocoa powder
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1 cup buttermilk
½ cup vegetable oil
2 large eggs
2 tsp vanilla extract
1 cup hot water or coffee
For the Mint Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
2 tbsp heavy cream
1 tsp peppermint extract
Few drops green food coloring
For the Chocolate Ganache (Optional):
½ cup heavy cream
1 cup semi-sweet chocolate chips
Instructions
Step 1: Make the Mint Cheesecake Layer
Preheat oven to 325°F (163°C). Grease and line a 9-inch springform pan with parchment paper.
In a large bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each addition.
Stir in peppermint extract, sour cream, and food coloring.
Pour batter into the prepared pan and bake for 35 minutes, or until the edges are set but the center is slightly jiggly.
Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
Step 2: Prepare the Chocolate Cake Layers
Preheat oven to 350°F (177°C). Grease and line two 9-inch cake pans.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add buttermilk, oil, eggs, and vanilla. Mix until combined.
Slowly add hot water (or coffee), mixing until smooth.
Divide batter evenly between the cake pans. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
Let cakes cool completely before assembling.
Step 3: Assemble the Cake
Place one chocolate cake layer on a serving plate.
Carefully place the chilled cheesecake layer on top.
Add the second chocolate cake layer.
Step 4: Frost and Decorate
To make frosting, beat butter until smooth. Gradually add powdered sugar, heavy cream, peppermint extract, and food coloring.
Frost the cake evenly, covering the sides and top.
For ganache, heat heavy cream until warm, then pour over chocolate chips. Stir until smooth.
Drizzle ganache over the cake and decorate with chocolate shavings or mint candies.
Notes
Use a water bath when baking the cheesecake to prevent cracks.
Chill the cheesecake layer for at least 4 hours before assembling the cake.
Trim cake layers if needed to ensure an even and stable assembly.
Use hot coffee instead of water in the cake batter to enhance the chocolate flavor.
Frost a chilled cake for easier spreading and cleaner slices.
