Description

Matcha Tiramisu is a delightful twist on the classic Italian dessert, replacing espresso with a rich matcha mixture. This no-bake dessert combines creamy mascarpone, soft ladyfingers, and the earthy, slightly sweet flavor of matcha. Perfect for matcha lovers, it’s an easy yet impressive dessert for any occasion.

Matcha Soaking Mixture:

  • 2 tablespoons matcha powder (premium grade)
  • 1 cup hot water
  • 2 tablespoons honey or maple syrup (optional)

Mascarpone Cream:

  • 3 large egg yolks
  • ½ cup granulated sugar
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Tiramisu Layers:

  • 24 ladyfingers (savoiardi)
  • Extra matcha powder for dusting

Instructions

Step 1: Prepare the Matcha Mixture

  1. Sift the matcha powder into a bowl to remove clumps.
  2. Add hot water and whisk until smooth.
  3. Stir in honey or maple syrup if you prefer a slightly sweetened matcha soak.

Step 2: Make the Mascarpone Cream

  1. In a heatproof bowl, whisk egg yolks and sugar over a double boiler until pale and thick.
  2. Remove from heat and mix in mascarpone cheese until smooth.
  3. In a separate bowl, whip heavy cream to stiff peaks, then gently fold it into the mascarpone mixture.

Step 3: Assemble the Tiramisu

  1. Dip each ladyfinger into the matcha mixture (1-2 seconds) and place them in a dish.
  2. Spread half of the mascarpone cream over the ladyfingers.
  3. Repeat with another layer of soaked ladyfingers and mascarpone cream.
  4. Cover and refrigerate for at least 4 hours (overnight for best results).

Step 4: Serve and Enjoy

  1. Before serving, dust with extra matcha powder.
  2. Garnish with white chocolate shavings or fresh berries if desired.

Notes

Use premium-grade matcha for the best flavor and color.

Avoid over-soaking the ladyfingers to maintain texture.

Refrigerate overnight for a more developed flavor.

If the matcha tastes too bitter, add a bit of vanilla or sweetener.
