Ingredients
- Fish Fillets: 4 (6-8 oz each) – cod, tilapia, salmon, or trout
- Lemon Juice: 2 tablespoons (freshly squeezed)
- Lemon Zest: 1 teaspoon
- Fresh Herbs: 2 tablespoons parsley (chopped), 1 tablespoon dill (chopped), 1 teaspoon thyme
- Garlic: 2 cloves (minced)
- Olive Oil: 2 tablespoons
- Salt and Pepper: To taste
- Optional Additions: Red pepper flakes, paprika, or capers
Instructions
Prepare the Fish
Rinse the fish fillets under cold water and pat dry with paper towels.
Season both sides of the fish with salt and pepper.
Make the Marinade
In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, and chopped herbs.
Marinate the Fish
Place the fish fillets in a shallow dish or resealable bag. Pour the marinade over them, ensuring each fillet is well coated.
Let the fillets marinate for 10-15 minutes while you preheat your oven or grill.
Cook the Fish
For Baking: Preheat the oven to 375°F (190°C). Place the marinated fillets on a parchment-lined baking sheet. Bake for 12-15 minutes, or until the fish flakes easily with a fork.
For Grilling: Heat the grill to medium-high and lightly oil the grates. Grill the fillets for 4-5 minutes per side.
For Pan-Searing: Heat a non-stick skillet over medium heat with a drizzle of olive oil. Cook the fillets for 3-4 minutes per side.
Garnish and Serve
Squeeze fresh lemon juice over the cooked fillets and garnish with additional chopped herbs.
Notes
Choosing Fish: Opt for fresh fish whenever possible, but frozen works if thawed correctly.
Marination Time: Longer marination can intensify the flavors but keep it under 30 minutes to avoid breaking down the fish texture.
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
Customizations: Add red pepper flakes for a spicy kick or substitute lime for lemon for a tangy twist.
