Description

Lavender ice cream is a unique and elegant dessert that blends the soothing floral notes of lavender with creamy ice cream. This homemade recipe is easy to make and perfect for those who love experimenting with gourmet flavors. Whether you’re looking for a sophisticated summer treat or a relaxing dessert, this lavender ice cream recipe is sure to impress.

Ingredients

Scale

For the Lavender Ice Cream Base:

2 cups whole milk

1 cup heavy cream

¾ cup granulated sugar

2 tbsp dried culinary lavender

4 egg yolks (optional, for a creamier texture)

1 tsp vanilla extract

¼ cup honey (optional, for natural sweetness)

For Vegan/Dairy-Free Version:

2 cups coconut milk

1 cup almond or cashew milk

¾ cup maple syrup or agave syrup

2 tbsp dried culinary lavender

1 tsp vanilla extract

Instructions

Infuse the Milk with Lavender

In a saucepan, heat the whole milk and heavy cream over medium-low heat.

Add dried lavender and let it simmer for 5-10 minutes to infuse the flavors.

Remove from heat and let the mixture steep for 20-30 minutes.

Strain the Lavender

Use a fine mesh sieve to strain out the lavender buds, leaving behind smooth, infused milk.

Prepare the Custard (Optional for Extra Creaminess)

In a separate bowl, whisk egg yolks and sugar until the mixture becomes pale and thick.

Slowly pour in the warm lavender-infused milk, whisking constantly to prevent curdling.

Pour the mixture back into the saucepan and heat gently until it thickens (about 5-7 minutes).

Chill the Ice Cream Mixture

Transfer the custard to a bowl and let it cool completely.

Cover and refrigerate for at least 2 hours (or overnight for best results).

Churn and Freeze

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.

Once it reaches a soft-serve consistency, transfer to a container and freeze for at least 4 hours.

Serve and Enjoy!

Scoop into bowls or cones, and garnish with fresh lavender, honey drizzle, or crushed nuts.

Notes

Use Culinary Lavender: Make sure to use food-grade lavender to avoid a bitter taste.

Balance the Floral Flavor: Add a touch of vanilla or honey to complement the lavender.

Don’t Over-Steep: Infusing too long can make the ice cream taste soapy.

For a No-Churn Version: Freeze the mixture and stir every 30 minutes until creamy.
