Wet Ingredients:

  • ½ cup milk
  • ⅓ cup unsalted butter, melted
  • 1 teaspoon vanilla extract

For the Pudding Layer:

  • ½ cup brown sugar
  • ¼ cup unsweetened cocoa powder
  • 1 ¼ cups boiling water

Optional Add-ins:

  • ½ cup chocolate chips
  • ¼ teaspoon espresso powder
  • Chopped nuts (walnuts, pecans)

Instructions

Step 1: Prepare the Batter

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, whisk together flour, granulated sugar, cocoa powder, baking powder, and salt.
  3. Stir in milk, melted butter, and vanilla extract until smooth.
  4. Spread the batter evenly into the prepared baking dish.

Step 2: Make the Pudding Layer
5. In a small bowl, mix brown sugar and cocoa powder.
6. Sprinkle this mixture evenly over the batter.

Step 3: Pour the Boiling Water
7. Gently pour boiling water over the entire mixture. Do NOT stir!

Step 4: Bake the Cake
8. Bake for 35-40 minutes or until the top is set and slightly firm.
9. Let it rest for 5-10 minutes before serving—this allows the pudding to thicken.
10. Serve warm with vanilla ice cream, whipped cream, or berries.

Notes

Don’t stir after adding the water – this is what creates the pudding layer!
Use high-quality cocoa powder for a richer chocolate taste.
Avoid overbaking to keep the pudding layer gooey.
Let it rest before serving to thicken the sauce.
Add espresso powder for a deeper chocolate flavor.
