  • 3 tbsp butter
  • 4 cups beef broth (low sodium preferred)
  • 3 cloves garlic (minced)
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 8 oz egg noodles
  • 1 cup Gruyère or Parmesan cheese (shredded)
  • Salt & black pepper to taste

  • 1/2 cup mushrooms (sliced)
  • 1/4 cup heavy cream (for a creamier texture)
  • 1/4 cup red wine (to enhance depth of flavor)
  • 1/2 tsp crushed red pepper (for a spicy kick)

Instructions

1. Prepare the Beef:

  • Season beef with salt and black pepper.
  • In a large skillet, melt 1 tbsp butter over medium-high heat.
  • Sear beef on all sides until browned (about 4-5 minutes). Remove from pan and set aside.

2. Caramelize the Onions:

  • In the same skillet, melt remaining butter.
  • Add sliced onions and cook on low heat for 30-40 minutes, stirring occasionally, until golden and caramelized.
  • Stir in garlic, thyme, and Worcestershire sauce.

3. Make the Sauce:

  • Pour in beef broth and deglaze the pan by scraping up any browned bits.
  • Return seared beef to the skillet.
  • Simmer for 20 minutes until the beef is tender and the sauce thickens.

4. Cook the Noodles:

  • While the sauce simmers, cook egg noodles according to package instructions. Drain and set aside.

5. Combine Everything:

  • Stir cooked noodles into the beef and onion mixture.
  • Sprinkle shredded Gruyère or Parmesan cheese on top and let it melt.
