  • 8 slices provolone or Swiss cheese

For the Au Jus:

  • 2 cups beef broth
  • 1 clove garlic, minced
  • 1 tsp soy sauce or Worcestershire sauce
  • 1/2 tsp dried thyme
  • 1 bay leaf

Instructions

1. Prepare the Biscuits:

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Stir in buttermilk until a dough forms. Turn out onto a floured surface, knead lightly, and roll to 1-inch thickness. Cut into rounds.

2. Cook the Beef:

  1. Heat a skillet over medium heat, add a splash of oil, and briefly sear the roast beef slices for added flavor. Set aside.

3. Make the Au Jus:

  1. In a saucepan, combine beef broth, garlic, soy sauce, thyme, and bay leaf. Simmer for 15–20 minutes, then strain.

4. Assemble the Biscuits:

  1. Slice the baked biscuits in half. Layer with roast beef and cheese.
  2. Return to the oven for 5 minutes or until the cheese melts.

5. Serve:
