Description

This Cracked Out Hash Brown Casserole is a cheesy, bacon-packed, and ranch-flavored dish that’s perfect for breakfast, brunch, or dinner! Super easy to make and absolutely delicious!

Ingredients

Scale

Essential Ingredients:

  • 1 (30 oz) bag frozen shredded hash browns, thawed
  • 1 cup sour cream
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1 packet (1 oz) dry ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • ½ cup melted butter
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Optional Add-Ons:

  • ½ cup diced green onions
  • 1 cup cooked, diced chicken
  • ½ teaspoon cayenne pepper for spice
  • ½ cup crushed Ritz crackers or breadcrumbs for a crispy topping

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.

Step 2: Prepare the Mixture

In a large mixing bowl, combine sour cream, cream of chicken soup, ranch seasoning, melted butter, garlic powder, onion powder, salt, and pepper. Stir well.

Step 3: Add Hash Browns, Cheese, and Bacon

Fold in thawed hash browns, shredded cheddar cheese, and crumbled bacon. Mix until fully coated.

Step 4: Transfer to Baking Dish

Spread the mixture evenly in the prepared baking dish. If using, sprinkle crushed Ritz crackers or breadcrumbs on top.

Step 5: Bake the Casserole

Bake uncovered for 40-45 minutes or until golden brown and bubbling. For an extra crispy top, broil for 2-3 minutes at the end.

Step 6: Serve and Enjoy

Let cool for a few minutes before serving. Garnish with extra bacon or green onions if desired.

Notes

Use freshly shredded cheese – Pre-shredded cheese doesn’t melt as well.

Bake uncovered – Helps achieve a golden, crispy top.

For extra creaminess – Add an extra ½ cup of sour cream or another can of cream of chicken soup.

Make it ahead – Assemble the night before and bake when ready.

Customize it – Add diced ham, jalapeños, or bell peppers for more flavor.
