Ingredients
For the Crust:
2 cups graham cracker crumbs
½ cup melted unsalted butter
2 tablespoons sugar (optional)
For the Filling:
2 (8 oz) packages cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 (8 oz) container whipped topping (e.g., Cool Whip)
For the Cherry Topping:
1 can (21 oz) cherry pie filling

2 cups fresh or frozen cherries
½ cup sugar
1 tablespoon lemon juice
2 tablespoons cornstarch mixed with ¼ cup water (if making from scratch)
Instructions
Make the Crust:
In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar (if using).
Press the mixture evenly into the bottom of a 9×13 inch dish.
Chill for 30 minutes or bake at 350°F for 8–10 minutes, then let it cool.
Prepare the Filling:
In a large bowl, beat softened cream cheese until smooth.
Add powdered sugar and vanilla; beat until creamy and well combined.
Fold in the whipped topping gently until fully incorporated.
Assemble the Dessert:
Spread the cream cheese filling evenly over the cooled crust.
Carefully spoon the cherry topping over the filling and spread it out gently.
Chill and Serve:
Refrigerate for at least 4 hours, preferably overnight.
