Main Ingredients:

  • 1 lb (450g) potato gnocchi
  • 2 chicken breasts, diced
  • 6 slices bacon, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • Fresh parsley, for garnish

Optional Additions:

  • ½ tsp red pepper flakes (for heat)
  • 1 cup spinach (for a nutritious boost)
  • ¼ tsp cayenne pepper (for extra spice)

Instructions

Step 1: Cook the Gnocchi

  1. Bring a large pot of salted water to a boil.
  2. Add the gnocchi and cook according to the package instructions (usually 2-3 minutes).
  3. Once they float to the top, drain and set aside.

Step 2: Prepare the Chicken and Bacon

  1. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside.
  2. In the same skillet, add diced chicken and cook until golden brown. Remove and set aside.

Step 3: Make the Creamy Sauce

  1. In the same pan, add olive oil and minced garlic. Sauté until fragrant.
  2. Pour in chicken broth and heavy cream, stirring to combine.
  3. Stir in Parmesan cheese and Italian seasoning, letting it simmer for 3-5 minutes until slightly thickened.

Step 4: Combine Everything

  1. Add the cooked gnocchi, chicken, and bacon back into the skillet.
  2. Stir until well-coated in the sauce. Season with salt and pepper.
  3. Garnish with fresh parsley and extra Parmesan before serving.

Notes

Don’t overcook the gnocchi – Remove it as soon as it floats.
Sauté gnocchi after boiling for extra texture.
Use fresh Parmesan for the best flavor.
Thin sauce too thick? Add a splash of broth or milk.
Want a low-carb option? Use cauliflower gnocchi or zucchini noodles.
