- 1 lb (450g) potato gnocchi
- 2 chicken breasts, diced
- 6 slices bacon, chopped
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup Parmesan cheese, grated
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 tbsp olive oil
- Fresh parsley, for garnish
Optional Additions:
- ½ tsp red pepper flakes (for heat)
- 1 cup spinach (for a nutritious boost)
- ¼ tsp cayenne pepper (for extra spice)
Instructions
Step 1: Cook the Gnocchi
- Bring a large pot of salted water to a boil.
- Add the gnocchi and cook according to the package instructions (usually 2-3 minutes).
- Once they float to the top, drain and set aside.
Step 2: Prepare the Chicken and Bacon
- In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside.
- In the same skillet, add diced chicken and cook until golden brown. Remove and set aside.
Step 3: Make the Creamy Sauce
- In the same pan, add olive oil and minced garlic. Sauté until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine.
- Stir in Parmesan cheese and Italian seasoning, letting it simmer for 3-5 minutes until slightly thickened.
Step 4: Combine Everything
- Add the cooked gnocchi, chicken, and bacon back into the skillet.
- Stir until well-coated in the sauce. Season with salt and pepper.
- Garnish with fresh parsley and extra Parmesan before serving.
Notes
Don’t overcook the gnocchi – Remove it as soon as it floats.
