For the Rich Provolone Sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

Step 1: Cook the Tortellini

  1. Bring a large pot of salted water to a boil.
  2. Add the tortellini and cook according to package instructions.
  3. Drain and toss with olive oil to prevent sticking. Set aside.

Step 2: Prepare the Cheesesteak Filling

  1. Heat butter in a skillet over medium-high heat.
  2. Add thinly sliced ribeye steak and cook until browned.
  3. Add onions, bell peppers, and garlic. Sauté until softened.
  4. Season with salt and black pepper. Remove from heat.

Step 3: Make the Rich Provolone Sauce

  1. Melt butter in a saucepan over medium heat.
  2. Whisk in flour and cook for 1-2 minutes.
  3. Slowly whisk in milk, stirring constantly.
  4. Add provolone and Parmesan cheese, stirring until melted.
  5. Season with garlic powder, salt, and black pepper.

Step 4: Combine Everything

  1. Add the cooked tortellini and cheesesteak filling into the provolone sauce.
  2. Stir to coat everything in the creamy sauce.
