Description

The Cheerwine Bundt Cake is a unique Southern dessert made with the iconic cherry-flavored Cheerwine soda. Its moist texture, vibrant color, and sweet, fruity taste make it a standout treat for any event. Topped with a luscious Cheerwine glaze, this cake delivers a nostalgic taste of North Carolina in every bite.

Ingredients

Scale

Cake Ingredients:

2 ½ cups all-purpose flour

2 cups granulated sugar

1 cup unsalted butter, softened

1 cup Cheerwine soda

4 large eggs

1 tsp vanilla extract

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

¼ cup cocoa powder (optional for a richer taste)

Cheerwine Glaze Ingredients:

1 cup powdered sugar

¼ cup Cheerwine soda

1 tsp vanilla extract

Instructions

Step 1: Preparing the Ingredients

Preheat your oven to 325°F (163°C).

Generously grease and flour a Bundt pan, ensuring every groove is covered.

Gather all ingredients and ensure butter and eggs are at room temperature.

Step 2: Mixing the Batter

In a large bowl, beat the softened butter and sugar until light and fluffy.

Add eggs one at a time, mixing well after each addition.

In a separate bowl, combine flour, baking powder, baking soda, cocoa powder, and salt.

Gradually add the dry ingredients to the wet mixture, alternating with Cheerwine soda.

Stir in vanilla extract until the batter is smooth and lump-free.

Step 3: Baking the Cake

Pour the batter evenly into the prepared Bundt pan.

Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 15-20 minutes before inverting onto a cooling rack.

Step 4: Preparing the Glaze

In a small bowl, whisk together powdered sugar, Cheerwine soda, and vanilla extract until smooth.

Drizzle the glaze over the cooled cake, letting it flow over the sides.

Notes

Use Real Cheerwine: Authentic Cheerwine soda provides the unique flavor that makes this cake special. Avoid substitutes for the best taste.

Room-Temperature Ingredients: Ensures a smooth batter and even baking.

Properly Grease the Pan: Prevents sticking and ensures easy removal.

Don’t Overmix the Batter: Overmixing can make the cake dense. Blend just until smooth.

Test for Doneness Early: Check at 50 minutes to avoid overbaking.

Cool Before Glazing: Allow the cake to cool slightly so the glaze sets beautifully.
