Instructions

  • Prepare the Cookie Dough:

    • In a bowl, whisk together the flour, baking soda, and salt. Set aside.
    • In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
    • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients, mixing until just combined. Chill the dough in the refrigerator for at least 30 minutes.
  • Make the Cheesecake Filling:

    • In a separate bowl, beat the cream cheese until smooth.
    • Add the granulated sugar and vanilla extract, mixing until fully combined. Chill for 15-20 minutes to firm up.
  • Assemble the Cookies:

    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Scoop a tablespoon of cookie dough and flatten it in your palm. Add a small dollop of cheesecake filling to the center.
    • Wrap the dough around the filling and roll it into a ball, ensuring the filling is fully enclosed. Place on the baking sheet, spacing them 2 inches apart.
  • Bake the Cookies:

    • Bake for 10-12 minutes or until the edges turn golden brown.
