Description

A spicy twist on the classic Sloppy Joe, made with tender chicken seasoned with bold Cajun spices. This easy-to-make dish offers a flavorful, zesty alternative perfect for a weeknight dinner.


Ingredients

  • 2 chicken breasts, ground or finely chopped
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 2 tbsp Cajun seasoning
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 4 hamburger buns
  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the ground chicken and cook until browned and cooked through, breaking it apart with a spatula.
  • Add the diced onion, bell pepper, and garlic to the skillet. Cook for 3-4 minutes until softened.
  • Stir in the crushed tomatoes, tomato paste, Cajun seasoning, Worcestershire sauce, smoked paprika, salt, and pepper. Let the mixture simmer for 10-12 minutes, stirring occasionally, until it thickens.
  • Toast the hamburger buns lightly in a separate skillet or oven, if desired.
  • Spoon the Cajun chicken mixture onto the bottom half of each bun, then top with the other half of the bun.
  • Garnish with chopped fresh parsley and serve immediately.
