- 2 chicken breasts, ground or finely chopped
- 1 tbsp olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 2 tbsp tomato paste
- 2 tbsp Cajun seasoning
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 4 hamburger buns
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground chicken and cook until browned and cooked through, breaking it apart with a spatula.
- Add the diced onion, bell pepper, and garlic to the skillet. Cook for 3-4 minutes until softened.
- Stir in the crushed tomatoes, tomato paste, Cajun seasoning, Worcestershire sauce, smoked paprika, salt, and pepper. Let the mixture simmer for 10-12 minutes, stirring occasionally, until it thickens.
- Toast the hamburger buns lightly in a separate skillet or oven, if desired.
- Spoon the Cajun chicken mixture onto the bottom half of each bun, then top with the other half of the bun.
- Garnish with chopped fresh parsley and serve immediately.
