- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon lemon zest
Instructions
- Preheat Oven: Set your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Make the Dough: In a bowl, mix flour, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy. Beat in the egg and vanilla. Gradually add the dry ingredients.
- Prepare Blueberry Filling: In a saucepan, combine blueberries, brown sugar, cornstarch, and lemon zest. Cook over medium heat until thickened, about 5 minutes. Let cool slightly.
- Assemble: Press 2/3 of the cookie dough into the prepared pan. Spread the blueberry filling over the dough. Crumble the remaining dough on top.
- Bake: Bake for 30-35 minutes or until the top is golden brown. Let cool before slicing into bars.
