Description

For the Cake:

2 ½ cups all-purpose flour

2 ½ tsp baking powder

½ tsp salt

1 cup unsalted butter, softened

1 ¾ cups granulated sugar

4 large egg whites

1 tsp vanilla extract

½ cup fresh strawberry purée

½ cup whole milk

Pink food coloring (optional)

For the Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

½ cup strawberry purée

1 tsp vanilla extract

Pink food coloring (optional)


Instructions

Preheat & Prep – Preheat oven to 350°F (175°C). Grease and flour two 8-inch cake pans.

Mix Dry Ingredients – In a bowl, whisk together flour, baking powder, and salt.

Cream Butter & Sugar – Beat butter and sugar until light and fluffy. Add egg whites and vanilla, mixing well.

Add Strawberry Purée – Mix in the fresh strawberry purée for a natural fruity flavor.

Combine Wet & Dry – Alternate adding the dry ingredients and milk to the batter, mixing until just combined.

Bake – Divide batter evenly between cake pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean.

Cool & Frost – Let cakes cool completely before frosting.

Make the Frosting – Beat butter until creamy, then gradually add powdered sugar. Mix in strawberry purée and vanilla until smooth. Add pink food coloring if desired.

Assemble & Decorate – Frost the cake and decorate as desired.

Notes

Use fresh strawberries for the best flavor.

Add a little extra pink food coloring for a bold Barbie pink color.

Chill the cake layers before frosting for a smoother finish.
