For the Chicken:

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • ½ cup buttermilk
  • 1 cup cornstarch (or all-purpose flour)
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 cup oil (for frying)

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon soy sauce (optional)

For Garnish:

  • Chopped green onions
  • Sesame seeds

Instructions

Step 1: Prepare the Chicken

  1. In a bowl, marinate the chicken pieces in buttermilk for at least 20 minutes.

Step 2: Coat the Chicken

  1. In a separate bowl, mix cornstarch, salt, garlic powder, and paprika.
  2. Dredge each piece of marinated chicken in the cornstarch mixture, making sure they are evenly coated.

Step 3: Fry the Chicken

  1. Heat oil in a frying pan to 350°F (175°C).
  2. Fry the chicken in batches for about 4–5 minutes or until golden brown and crispy.
  3. Drain excess oil on paper towels.

Step 4: Make the Bang Bang Sauce

  1. In a bowl, mix mayonnaise, sriracha, honey, lime juice, and soy sauce. Stir until smooth.

Step 5: Toss and Serve

  1. Toss the crispy chicken in the sauce or drizzle it over the top.
  2. Garnish with green onions and sesame seeds.
  3. Serve immediately and enjoy!

Notes

For extra crunch, double-coat the chicken in cornstarch.

Air-fryer method: Cook at 375°F (190°C) for 15 minutes, shaking halfway through.

Baked version: Bake at 400°F (200°C) for 20 minutes, flipping once.

Want it spicier? Add more sriracha or a pinch of cayenne pepper.

For a healthier sauce, substitute Greek yogurt for mayonnaise.
