Chicken
4 boneless, skinless chicken breasts
1 tbsp olive oil
Salt and pepper, to taste
Caprese Toppings
2 large tomatoes, sliced
8 oz fresh mozzarella, sliced
Fresh basil leaves
Seasoning and Sauce
1 tsp Italian seasoning
1 tbsp balsamic vinegar
2 tbsp balsamic glaze (for garnish)
Instructions
Preheat the Oven:
Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
Prepare the Chicken:
Pat the chicken breasts dry with a paper towel.
Rub each chicken breast with olive oil and season both sides with salt, pepper, and Italian seasoning.
Sear the Chicken (Optional):
For extra flavor, heat a skillet over medium-high heat, add a little olive oil, and sear the chicken breasts for 2-3 minutes on each side until lightly golden.
Arrange in Baking Dish:
Place the chicken breasts in the prepared baking dish in a single layer.
Add Toppings:
Place 2-3 slices of tomato on top of each chicken breast.
Add a slice or two of fresh mozzarella over the tomatoes.
Bake:
Bake the chicken in the preheated oven for 20-25 minutes or until the internal temperature of the chicken reaches 165°F (74°C).
Add Basil:
Remove the dish from the oven and let it rest for 2-3 minutes. Garnish each chicken breast with fresh basil leaves.
Drizzle with Balsamic Glaze:
Drizzle the balsamic glaze over the chicken for a flavorful finish.
Serve:
Serve immediately with your favorite side dishes, such as roasted vegetables, salad, or garlic bread.
Notes
If you prefer, you can use chicken thighs instead of chicken breasts for a juicier result.
Add a pinch of red pepper flakes for a touch of heat.
Serve with crusty bread, pasta, or a side salad for a complete meal.
