For the Cauliflower Bites:

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour (or almond flour for gluten-free)
  • 1 cup water or milk (for extra crispiness)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Buffalo Sauce:

  • ½ cup hot sauce (Frank’s RedHot recommended)
  • 2 tablespoons melted butter (or olive oil for vegan)
  • 1 tablespoon honey or maple syrup (optional for a hint of sweetness)
  • ½ teaspoon cayenne pepper (for extra heat)

Optional Toppings:

  • Chopped fresh parsley
  • Sesame seeds for added crunch
  • Extra drizzle of buffalo sauce

Instructions

Step 1: Prep the Cauliflower

  • Preheat your oven to 425°F (220°C).
  • Line a baking sheet with parchment paper or a lightly greased wire rack for crispier bites.
  • Wash and dry the cauliflower, then cut into bite-sized pieces.

Step 2: Make the Batter

  • In a large bowl, whisk together flour, water (or milk), garlic powder, onion powder, paprika, salt, and black pepper.
  • Dip each cauliflower piece into the batter, letting excess drip off before placing on the baking sheet.

Step 3: Bake the Cauliflower

  • Arrange cauliflower in a single layer, ensuring they aren’t overcrowded.
  • Bake for 20-25 minutes, flipping halfway, until golden and slightly crispy.

Step 4: Make the Buffalo Sauce

  • In a small saucepan, melt butter (or olive oil) and stir in hot sauce and honey.
  • Remove from heat and set aside.

Step 5: Toss & Bake Again

  • Once the cauliflower is golden, remove it from the oven and toss in buffalo sauce.
  • Return to the oven and bake for another 10 minutes for extra crispiness.

Step 6: Serve & Enjoy!

  • Garnish with parsley, sesame seeds, or extra buffalo sauce.

Notes

For Extra Crispiness: Add 1-2 tablespoons of cornstarch to the batter or coat with panko breadcrumbs before baking.
Air Fryer Option: Cook at 375°F (190°C) for 15-18 minutes, shaking halfway, then toss in sauce and air-fry for another 5 minutes.
Want Them Spicier? Add more cayenne pepper or a dash of sriracha to the sauce.
Gluten-Free? Use almond flour instead of all-purpose flour.
Storing Leftovers: Store in an airtight container in the fridge for up to 3 days. Reheat in the oven at 375°F (190°C) for 10-12 minutes.
