Ingredients

Scale

For the Biscuit Dough

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/3 cup cold unsalted butter (cubed)

3/4 cup milk or heavy cream

For the Apple Filling

2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1/4 cup brown sugar

1 tsp cinnamon

1/4 tsp nutmeg

1 tbsp unsalted butter

1 tsp vanilla extract

1 tsp lemon juice

Optional Toppings

Powdered sugar for dusting

Caramel drizzle

Whipped cream or vanilla ice cream

Instructions

Step 1: Prepare the Apple Filling

  1. In a saucepan over medium heat, melt 1 tbsp butter.
  2. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Stir well.
  3. Cook for 5-7 minutes until the apples soften and the mixture becomes syrupy.
  4. Remove from heat, stir in the vanilla extract, and let the filling cool.

Step 2: Make the Biscuit Dough

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Slowly add milk, stirring gently until the dough comes together (don’t overmix).

Step 3: Assemble the Biscuits

  1. Roll out the dough on a floured surface to about 1/2-inch thickness.
  2. Use a biscuit cutter or glass to cut rounds from the dough.
  3. Place a spoonful of the apple filling in the center of half the rounds.
  4. Top with another round of dough and press the edges to seal.

Step 4: Bake

  1. Place the assembled biscuits on the prepared baking sheet.
  2. Bake for 15-20 minutes, or until the tops are golden brown.
  3. Remove from the oven and let them cool slightly.

Step 5: Add Finishing Touches

  1. Dust the biscuits with powdered sugar, drizzle with caramel, or serve with whipped cream/ice cream for an extra-special treat.

Notes

Make-Ahead Tip: The apple filling can be prepared up to 3 days in advance and stored in an airtight container in the refrigerator.
